Assistant Manager – Stewarding

About the role

The Assistant Manager – Stewarding will support the efficient operation of the stewarding department at Alila Hinu Bay, ensuring that all food‑and‑beverage equipment and kitchen areas meet Hyatt International standards. Reporting to the Stewarding Manager, the role balances operational oversight with staff development to deliver high‑quality service for guests and owners.

Key responsibilities

• Assist in day‑to‑day management of the stewarding team, ensuring cleanliness, hygiene and equipment maintenance.
• Coordinate with the Executive Chef and Purchasing Manager to maintain optimal stock levels and approve storeroom requisitions.
• Monitor and control operating costs, budget performance and implement corrective actions when needed.
• Lead recruitment, training and performance management of department staff.
• Schedule preventative maintenance and liaise with engineering to keep facilities in excellent condition.
• Conduct daily briefings, maintain accurate records of specifications, costs, breakage and par stock.

Required profile

• Proven experience in kitchen and stewarding operations within a hotel or resort environment.
• Strong leadership and supervisory abilities with a hands‑on, lead‑by‑example style.
• Commitment to delivering exceptional guest service and upholding brand standards.
• Excellent problem‑solving skills and ability to adapt to changing operational needs.

Required skills

• Knowledge of food‑service sanitation and hygiene regulations.
