Chef de Cuisine – Fine Dining

About the role

We are looking for a seasoned Chef de Cuisine to lead the culinary team at an ultra‑luxury 5‑star resort renowned for its wellness focus. You will shape the dining experience, blending fine‑dining excellence with innovative, sustainable wellness cuisine.

Key responsibilities

• Rejuvenate the culinary experience and embed wellness and sustainability practices.
• Maintain strict adherence to brand standards, F&B policies, and hygiene regulations.
• Oversee kitchen operations, including inspections, maintenance, and product improvement.
• Manage incoming produce, ensuring compliance with order sheets and purchasing specifications.
• Coordinate clear communication between all property departments to support seamless service.
• Supervise storage, stock control, and inventory management.
• Control the department budget, monitor costs, and drive profitability.
• Conduct daily to annual forecasting to meet and exceed budget targets.
• Participate in meetings and briefings as directed by management.

Required profile

• Minimum 5 years experience in a luxury resort, fine‑dining or Michelin‑starred restaurant.
• Strong knowledge of property standards, F&B policies, and culinary procedures.
• Solid Mediterranean culinary foundation (preferred) and familiarity with modern wellness cuisine.
• Experience with sustainable sourcing and wellness‑focused menus.
• Previous work in island or remote‑area operations is a plus.
• Excellent written and spoken English.
• Hands‑on, calm under pressure, well‑organized, and passionate about mentoring staff.
