Sous Chef - Italian Cuisine

About the role

Mandarin Oriental Muscat is seeking a Sous Chef – Italian Cuisine to join its culinary team. The role involves collaborating with the Chef de Cuisine to create authentic Italian dishes and ensure high standards of quality, safety, and service.

Key responsibilities

• Collaborate with the Chef de Cuisine to create dishes and suggest menu items for special promotions and events.
• Maintain authenticity of all Italian cuisine prepared, adhering to standards set by the Chef de Cuisine.
• Oversee daily ordering and requisition of ingredients and ensure strict adherence to food safety standards.
• Provide leadership, direction, and support to all kitchen colleagues at all times.
• Assist the Chef de Cuisine in preparing weekly staff rosters and conduct hands‑on dish training.
• Supervise cleanliness and maintenance of the Essenza kitchen, ensuring an immaculate environment.
• Monitor VIP guest requirements, including special dietary requests, and ensure customer satisfaction in line with MOHG standards.
• Conduct counselling and disciplinary actions in line with company procedures and attend daily and weekly team meetings.

Required profile

• Strong experience in authentic Italian culinary techniques, including regional dishes, pasta and sauce preparation.
• Proven ability to lead a culinary team in a high‑end fine‑dining environment.
• Excellent understanding of food safety, hygiene, and kitchen management practices.
