Head Baker

About the role

The Head Baker will lead the bakery operations at our hotel, preparing a variety of breads and pastries to the highest quality standards. This role combines hands‑on baking expertise with responsibility for food safety, inventory management, and supporting the culinary team.

Key responsibilities

• Prepare breads, pastries, doughs, and fillings, including proofing, baking, and decorating according to recipes.
• Review daily production sheets and plan the baked goods output.
• Maintain kitchen logs and ensure compliance with food safety programs.
• Monitor appliance temperatures, report issues, and uphold hygiene standards.
• Communicate excess inventory to the Chef for daily specials planning.
• Assist management with hiring, training, scheduling, and employee coaching.
• Adhere to company policies, safety procedures, and professional appearance standards.

Required profile

• Minimum 2 years of experience in a bakery or pastry production environment.
• Technical, trade or vocational education in baking, pastry arts or a related field.
• Strong understanding of food safety and hygiene regulations.
• Physical ability to lift up to 25 lb, stand for extended periods, and work on uneven surfaces.

Required skills

• Baking and pastry preparation techniques.
• Operation of ovens, mixers, proofing cabinets and other bakery equipment.
• Food safety handling, temperature monitoring and documentation.
