Head Pastry Chef (Muscat)

About the role

La Cabra is seeking a Head Pastry Chef to lead its bakery operations in Muscat, ensuring premium quality and innovative product offerings.

Key responsibilities

• Lead daily bakery operations, meeting demand while maintaining the highest quality standards.
• Supervise preparation of breads, viennoiserie, and pastries, adhering to recipes and brand guidelines.
• Oversee product development and testing, introducing new recipes and seasonal items.
• Manage inventory of raw materials and collaborate with procurement on sourcing.
• Recruit, train, and mentor bakery staff, fostering a culture of excellence.
• Implement scheduling and labor planning for efficient operations.
• Maintain hygiene, food safety, and workplace safety standards.
• Collaborate with Retail and Marketing teams for launches and seasonal menus.
• Research global baking trends and work with R&D to create innovative products.

Required profile

• Minimum 5 years of professional baking experience, with at least 2 years in a leadership role.
• Expertise in artisan bread and viennoiserie, including laminated doughs and sourdough.
• Proven ability to lead and train diverse teams in high‑volume, premium‑quality environments.
• Strong understanding of ingredient sourcing, fermentation processes, and bakery science.
• Excellent organizational, communication, and leadership skills.

Required skills

• Artisan bread and viennoiserie techniques (laminated doughs, sourdough, long‑fermentation).
• Product development and recipe testing.
• Inventory management and raw material quality control.
• Familiarity with productivity and task management apps such as Notion.
