Commis – Kitchen Assistant

About the role

The Commis supports the kitchen team in preparing and serving food at Alila Hinu Bay. This position involves handling stocks, soups, vegetables, meat dishes and sauces while maintaining high standards of hygiene and service.

Key responsibilities

• Prepare daily soups and ensure the work station is fully set up for service.
• Maintain clean and well‑stocked refrigerators and monitor wastage and portion control.
• Deliver friendly, excellent service to guests and respond to their queries.
• Follow hotel and restaurant customer programmes and complaint handling procedures.
• Attend shift briefings, wear the correct uniform and sign the attendance record.
• Support colleagues across departments and participate in training sessions.
• Keep the work area clean, report maintenance issues and operate equipment according to guidelines.
• Promote hotel activities, suggest cost‑saving measures and adhere to energy‑saving practices.

Required profile

• High school diploma or equivalent; culinary school certification is a strong plus.
• 1–2 years of experience in a professional kitchen environment.
• Positive attitude, good teamwork and ability to work in a fast‑paced hospitality setting.
• Understanding of HACCP and food safety regulations.
• Willingness to follow hotel safety, fire and emergency procedures.

Required skills

• Basic knife skills.
• Knowledge of salads, appetizers and sandwiches.
• Experience with buffet and à la carte operations.
