Head Baker – Muscat

About the role

We are seeking a Head Baker to lead our bakery operations in Muscat. The role combines hands‑on baking expertise with strategic leadership to ensure premium quality, consistency and innovation across all bakery products.

Key responsibilities

• Lead daily bakery production, overseeing breads, viennoiserie and pastries while meeting demand and quality standards.
• Supervise product development, testing new recipes and seasonal items aligned with brand philosophy.
• Manage raw‑material inventory, monitor ingredient quality and collaborate with procurement.
• Recruit, train and mentor a multicultural bakery team, develop structured training programmes and schedule labour efficiently.
• Ensure hygiene, food‑safety and workplace‑safety compliance, and implement workflow systems to optimise efficiency and reduce waste.
• Collaborate with Retail and Marketing on launches, campaigns and seasonal menus.
• Research global baking trends and work with R&D to create innovative products that reflect the brand’s artisan ethos.

Required profile

• Minimum 5 years professional baking experience, including at least 2 years in a leadership role.
• Expertise in artisan bread and viennoiserie, especially laminated doughs, sourdough and long‑fermentation methods.
• Proven ability to lead and train diverse, high‑volume teams.
• Strong knowledge of ingredient sourcing, fermentation processes and bakery science.
• Excellent organisational, communication and leadership skills.
• Familiarity with international bakery operations and productivity tools such as Notion.
